Bigos is the national dish of Poland. it is a hearty winter stew of cabbage, saurkraut, pork, bacon and sausage. As part of my plan to cook a meal from every nation I've visited, the random number generator suggested this one first.

I did the initial meal and then put the food in the slow cooker and had it again for lunch the following day. Like most pork dishes, an overnight slow cook makes a lot of difference.

Its a strong, heavy and sharp dish, I would, doing it again, serve it with a dark bread rather than alone, or a side dish of potatoes.
