COSTA RICA: Caribbean Rice & Beans

Easily mistaken for Gallo Pinto in restaurants by travellers, on the Caribbean coast of Costa Rica, a dish of White Rice & Red Beans, simmered in coconut milk has a similar name, but a very different flavour.

It is much easier and faster to make than Gallo Pinto, and without the need for the more exotic Salsa Lizano, it is a hearty and delicious rice dish. I followed https://www.baconismagic.ca/costa-rica/caribbean-rice-and-beans/ for mine.

Get the water and coconut milk simmering on the stove, then add the rice, spicy pepper and thyme and let it cook for twenty minutes or so (covered).

When the water/milk is absorbed, remove the pepper and stir in the cooked beans. If needed, drain through a sieve. (for example, if you added too much water to the rice).

Season and serve.
